I am a pro, I have a custom dessert catering business in LA called LoveCakes.

What type of cupcake will you be bringing to CupcakeCampLA?
For sure I will bring my best-selling Red Velvet. For variety, I might include a few other favorites such as Dalmatian, a vanilla cupcake studded with mini chocolate chips.

Why do you want to be part of Cupcake Camp LA?
I’ve had my business for a few years now and I absolutely loooooove what I do. Cupcake Camp LA will allow me to share my delicious cupcakes with a wider audience while also helping several wonderful charities.

What makes a great cupcake?
For me it’s all about flavor. You can have the prettiest, most artfully decorated cupcake on the table, but if the cake is dry, the frosting is too sweet or worse, made with shortening, then it is simply not worth the time and calories.

What’s your favorite cupcake flavor?
I’m so traditional, I love a moist vanilla cake with my super rich chocolate cream cheese frosting. While Red Velvet is my best-seller, and for good reason, it always comes back to the basics. My mom used to make the yummiest cakes when I was growing up, and a simple vanilla/chocolate combo is hard to beat.

Do you have a favorite cupcake memory?
I can’t think of a specific cupcake-related memory, but I do have very wonderful memories of baking with my mom grandma over the years. My grandma always threw a Mother/Daughter Cookie Party at the holidays, so the smell of fresh-baked cookies makes me think of her. And every year for my birthday, my mom would ask me what kind of cake I wanted, but most of the time I requested pie! A fresh strawberry or creamy banana pie is just heaven.

Got a good cupcake tip?
Be very, very careful and patient when starting out. Always read a new recipe all the way through before picking up a spatula. Make sure you understand each step, have all ingredients on hand, and pay close attention to measuring and adding them. In cooking, you have more room to change things up, add a spice here or there, but in baking, its much more of a science, so you have to be careful when deviating from a recipe. But on the other hand, sometimes those crazy deviations end up producing some delicious mistakes!

My quick and easy way to dress up a cupcake is to make custom paper toppers. I have several tools including a Cricut machine, paper punches and stacks of color printed papers. You can easily print out personalized messages on cardstock and cut out with the punches, use a coordinating printed or solid color paper for the back, adhere with a small piece of sticky foam, stick a toothpick in the foam and presto, a custom topper!
